We are always learning and discovering new things everyday, but the one thing that we get asked is how do you make those cookies, which means apart from decorating them, the cookies have to be a nice too. What's the point of having a beautiful cookie if they don't taste yummy right? :)
When we first started making cookies we tried several sugar cookies recipe and some works well and some not so well. Some cookie dough needs to be refrigerated (chilled) before you can work on them and some doesn't need to. After trying quite a few different ones we found that we like the dough that doesn't need to be chilled, we like getting into the baking process straight away so we thought we will share the recipe here. This recipe is adapted from Sugar Belle's Recipe and we love how it tasted and its very easy to work with :)
Simple Vanilla Sugar Cookies Makes approximately 2 dozen of cookies
175 grams icing sugar
227 grams salted butter (room temperature)
1 egg (room temperature)
2 teaspoons vanilla extract (or any flavour your prefer)
1 teaspoon baking powder
420 grams all-purpose flour
Cream together butter and icing sugar.
Add eggs and vanilla extract and mix well.
Sift together flour & baking powder, add to the mixture little by little until well incorporated.
Wait approximately 5-10 mins before working with the dough as it will firm up slightly. Roll and cut cookies into desired shapes, lightly dust with flour if necessary.
Bake cookies at 180 Celsius for 7-8 minutes.
Note: each oven is different, I would recommend you get to know your oven and adjust accordingly.
I always let the cookies cool for at least four hours, sometimes even overnight before moving them into an airtight container. I prefer waiting until they are a day old before decorating them to reduce the chance of oil from the cookie leaching into the icing and causing icing spots.
Its a very simple recipe and will only take less than 10 mins to make. Hope this will encourage you to give it a try and have fun making cookies and decorating them :)
