Blueberry & Lemon Friand
This little french cake is really moist & scrumptious.

Blueberry and lemon friand

Ingredients:
- 150 grams butter
- 187 grams icing sugar
- 38 grams all purpose flour
- 128 grams almond meal
- 4 egg whites
- 1 lemon {grated rind only}
- 70-80 grams blueberries
Instructions:
- Preheat oven to fan bake at 160 degrees.
- Generously apply cake release batter into friand pans.
- Melt the butter and set aside to cool.
- Sift the icing sugar and flour into a bowl then add the almond meal.
- Whisk the egg whites in another bowl until they form a soft peak or a floppy foam.
- Make a well in the center of the dry ingredients and put the egg whites into it.
- Add lemon rind into the mixture then lightly stir in the butter to form a soft batter.
- Scoop the batter into the friand pan (we used an ice cream scooper to make it easier to portion out)
- Add the blueberries over each cake batter and bake for 15-20mins until they are golden brown or firm to the touch.
- Cool in the tins for 5 minutes, then turn out and cool on a wire rack.
- Lastly, dust lightly with icing sugar as the finishing touch.
That's it, pretty simple to make and very yummy for your tummy :)
