This chocolate sugar cookies recipe is adapted from LilaLoa's recipe, we have converted the recipe to metric to make it easier for us down under :)
Chocolate Sugar Cookies Makes approximately 2 1/2 dozens of cookies
Ingredients:
250g butter
360g or 420g all purpose flour
48g vegetable shortening
300g granulated sugar
80g cocoa
2 eggs
1 teaspoon vanilla
1 teaspoon salt
3/4 teaspoon baking powder
Instructions:
Cream butter, shortening and sugar together.
Add
eggs and vanilla, mix well.
Add baking powder and salt and mix again.
Stir in the cocoa until well blended.
Add flour a little at a time (*Note: IF YOU ARE GOING TO MAKE COOKIES RIGHT AWAY, ADD 420g of flour. If you are going to "chill" the dough, or just wait for another day to make your cookies, STOP AT 360g. It will be totally soft and look all wrong, but it will be fine after chilling).
Roll out on lightly floured surface. Bake at 180 C for 7-8 minutes. Note: each oven is different, I would recommend you get to know your oven and adjust accordingly.
These chocolate cookies are not as soft as the vanilla sugar cookies, i suspect that's because of the cocoa, however if you like a more firmer cookies you might want to give this recipe a go, or maybe you just want to try something different than the usual sugar cookies, these cookies are yummy and its chocolate, who wouldn't like it right?
